bbq_pulled_pork

Here is a twist on an old fashioned BBQ pulled pork. This BBQ pulled chicken recipe is perfect even if you do not have a slow cooker/ crock pot. All you need is your oven and a baking pot with a lid to get the desired texture and taste.

Ingredients

4 chicken breasts
1 cup all natural BBQ sauce
2 tablespoons Tabanero hot sauce
½ cup diced onion
1 clove of garlic minced
1 tablespoon olive oil

Cooking Instructions

Place an oven safe pot with 1 tablespoon of olive oil on the stove on medium high. Pre heat the oven to 325 degrees. Dice onion and mince garlic while pot is heating. Add the onion and garlic to the pot and bring heat down to medium. Rinse, de-fat and quarter each chicken breast.

Add in the chicken and all natural BBQ sauce to the pot. Stir all ingredients together and remove from the stove. Place a lid on the pot and place the pot on the middle rack of the oven. Cook for 60 minutes and then check on the contents of the pot.  Stir the contents around and pour some juices on top of the chicken if any areas are uncovered. Continue to cook for about 20 minutes or until chicken is cooked all the way through and tender.

Once done cooking, remove the pot from the oven and place the chicken on a plate. Bring the pot back on to the stove and simmer on medium heat and allow for the juices from the chicken and sauce to reduce. While the sauce is reducing, begin to pull apart the chicken using a fork and a knife to desired consistency and thickness. Once the sauce has reduced and become a bit thicker in consistency, remove the pot from the heat and pour sauce over the shredded chicken.

This can be served plain or on a bun to make BBQ pulled chicken sandwich. Add more of the original BBQ sauce if needed.
