black bean brownie recipe

I know what you are thinking… black beans in brownies? GROSS!

At first I thought the same exact thing! I thought that using black beans in a brownie recipe was a little too “healthy” for my taste, but I kept seeing posts about how you could use black beans as a flour substitute in homemade brownie recipes. Eventually I gave in and decided to give it a try. I made a batch for myself, just as an experiment but to my surprise- these taste AMAZING!!!! You would never know that black beans were used as the base for these brownies. The black beans in the brownies also keep them moist for days. Below you will find the ingredients and cooking instructions for my black bean brownie recipe. This recipe is a great option for those of you who are trying to maintain a healthy diet but have an unwavering sweet tooth.

Black bean brownie recipeIngredients:

1 Can Low Sodium Black Beans
1 Large Banana
3 Tbsp Natural Peanut Butter
2 Tbsp Unsweetened Cocoa Powder
2 Tablespoon Extra Virgin Olive Oil
1 Tsp Baking Powder
1 Tsp Vanilla Extract
1 Whole Egg
2 Tbsp Oat Flour
½ Cup Milk Chocolate Chips
¼ Cup Dried Cherries
1 Scoop Chocolate Protein

Optional Topping:
¼ Cup Shredded Coconut
¼ Cup Chopped Pecans

Instructions for mixing:
Preheat oven to 350 degrees. Spray an 8×8 oven safe baking pan with non stick cooking spray. Drain and rinse the can of black beans until the water runs clear. Make sure the beans are dry and not holding a lot of water. Place the black beans in a food processor. Then add in remaining ingredients except for the chocolate chips and dried cherries and turn on the food processor. Allow all ingredients of the black bean brownies to mix well together. Once ingredients are blended well enough to look like a batter add in the chocolate chips and dried cherries and lightly mix in by hand. Pour the black bean brownie batter into the baking pan and add the shredded coconut and pecans on top if you would like. Place the baking pan in the oven and allow to bake for 25 minutes. Remove the black bean brownies from the oven and allow to cool. Then cut the black bean brownies into 16 pieces.

Yields 16 Black Bean Brownies.
