Low carb Salmon with Arugula recipeSalmon is a great option when trying to get a good source of fat into your diet while keeping your carb intake low. This fish cooks easily and is very flavorful. Create the low carb recipe below for the Arugula Sauce and add it on top of your next salmon meal for a lite and healthy low carb  meal option that you can create in the comfort of your own home.

Ingredients: 

4 Salmon Fillets
4 Tablespoons Olive Oil
 

For Arugula sauce ingredients:
1 Cup Arugula
1/2 Tablespoon Sesame Seeds
3 Tablespoons Olive Oil
1/2 Teaspoon Minced Garlic
1/4 Teaspoon Salt

Directions: 

Wash arugula and drain in a colander. Put all ingredients for arugula sauce into a blender or food processor. Blend until smooth.
2. Sprinkle black pepper over each salmon fillet. In a skillet, heat olive oil and cook the salmon filets until brown (about 5 minutes). Flip and cook the other side until the flesh is firm and flakes easily.
3. On each serving plate, pour a bit of arugula sauce and place a salmon filet on top.
