Shrimp Avocado TartareWho says eating healthy has to be boring? Put on your chef hat and follow the steps below to create a beautiful and tasty low carb meal that will look like it came from a restaurant!


 12 Medium shrimp, deveined, peeled and tails removed
1 Avocado
1 Teaspoon Lemon Juice
2 Tablespoons Plain Greek Yogurt
1 Tablespoon Minced Onion
1 Tablespoon Mayonnaise
1 Tablespoon Dijon Mustard
1 Teaspoon Chili Sauce


1. Clean shrimp in running water and drain on paper towel. Boil 1 cup of water in a saucepan. When it boils, put shrimp into the saucepan. Cover and cook for 3-5 minutes. Drain shrimp and place on a paper towel to soak up any excess water. Cut each shrimp into half. Set aside.
2. Cut open the avocado, remove the seed, scoop avocado pulp and dice. In a bowl, combine avocado, lemon juice, yogurt and a pinch of salt. Mix the ingredients well.
3. In another bowl, mix shrimp, minced onion, mayonnaise, Dijon mustard and chili sauce. 
4. Place a mousse pasty ring on each serving plate, place the avocado mixture in as the first layer and then place the shrimp mixture on top. Press top gently with the back of the spoon to mold together. Allow the mixture to settle for a few minutes and then remove the pastry ring. Top with a couple of capers.
