As lunchtime approaches, are you sticking with your healthy eating plan or will you be ducking out for some fast food? Try bringing your own lunch to work a few days a week and you will be surprised at how much money you can save and how many calories you will save as well. Bringing lunch from home doesn't have to be boring! I am excited to share with you one of my favorite healthier recipes.  My delicious chicken salad recipe is great served cold so you do not even have to worry about looking for a microwave.

Healthy Chicken Salad Ingredients

Ingredients:

3 Chicken Breasts
1 cup halved grapes
1 cup diced apples
2 tablespoons of mayonnaise with Olive Oil
¼ cup chopped nuts
1 low carb wrap

Directions:

Season and bake the whole chicken breasts. Once thoroughly cooked, dice by hand or shred chicken in food processor. Place chicken into a medium bowl and mix with grapes, apples, nuts and mayo (just enough to keep it moist). This recipe yields 4 servings and can be eaten as a salad or a wrap with some lettuce.
